Grocery shopping can be lots of fun, and if you go about it the right way, you can save money too. Whether there are just a couple of you or you have a large family, it’s important to find ways to make shopping enjoyable and not a chore.

There are several things you can do before you ever step foot in the store to make it enjoyable. And, if you don’t want to go into the store, many ACME® locations have pickup and delivery options, so they do all the work for you. 

Meal Prepping 

I can’t stress enough; if you are on a tight budget, it’s vital to meal prep. While that doesn’t necessarily mean you have to cook every recipe ahead of time, you can prep many of the ingredients. Gather some good-quality food storage containers and get busy. Here are a few things you can do when you get your groceries home. 

  • Slice the veggies. 
  • Clean the fruit. 
  • Brown ground meat and place in the fridge or freezer. 
  • Cook and shred chicken. 

Menu Planning

No matter which method you go with, make sure to try to use ingredients that you can add to many recipes. For example, cook several chickens at once and add the meat to tortilla soup, enchiladas, and chicken casserole for the week. 

Keep the menu simple and easy to manage for busy weeknights and go for more involved recipes when time allows. 

Grocery List Development 

After you have gathered all your recipes for the planned period, you are ready to start making your list. I like to organize my list by the section of the store it’s in. Fruits and veggies, dairy, and meats are a few of the sections. Then I can hurry down the aisles and grab what I need. This decreases the risk for temptations too! 

Challenge yourself to save money by planning and prepping ahead. Trust me, when you turn it into a challenge, it feels so good and is very fun too. 

Now it’s time to get down to the nitty gritty and talk about these delicious keto rhubarb crumble bars. Soft, tender bars with the perfect combination of strawberries and rhubarb can be found in every taste. 

Ingredients Needed 

  • Coconut Oil – Normally, I tell you to use melted coconut oil, but you will need cold oil for the crust! Then you will need some melted coconut oil for the crumble topping. 
  • Flour – You’ll need to use both almond and coconut flour to get the most amazing texture. 
  • Sweetener – You don’t need tons of sweetener; a little bit is plenty! You will need it for the crust, filling, and crumble. 
  • Eggs – Naturally, the eggs help hold all the ingredients together and help form a delicious crust. I use O Organics® Cage Free Eggs. 
  • Vanilla – Baked goods almost always taste better with a little bit of vanilla extract. This one is no different. 
  • Rhubarb – You’ll need fresh rhubarb. 
  • Strawberries – Mixing rhubarb with strawberries is downright heavenly! 
  • Xanthan gum – Adding a little bit will give the jam filling a thicker texture. 

How To Make Keto Rhubarb Crumble Bars

Step One: Line a baking pan with parchment paper and turn the oven to 325 degrees.

Step Two: Mix the coconut oil, almond flour, coconut flour, sweetener, eggs, and vanilla together in a food processor. Press the crust into the bottom of your pan using your fingers or the back of a wooden spoon. 

 Step Three: Chop and prepare the O Organics® strawberries and rhubarb.

Step Four: Cook the rhubarb in a medium skillet for 5 minutes or until it has softened. Then mix in the strawberries and continue to cook for 2-3 minutes. Sprinkle in the xanthan gum and mix. Let the fruit cool for 10 minutes.

Expert Tip: The easiest way to slice frozen whole strawberries is to let them sit on a cutting board for 10-15 minutes so they begin to soften. Then slice them with a sharp knife.

Step Five: Spread the strawberry rhubarb mixture on top of the crust.

Step Six: Prepare the crumble topping. Mix together theOpen Nature® almond flour, sweetener, and coconut oil in the food processor. 

Expert Tip: Now is a great time to add some nuts or unsweetened shredded coconut to the crumble topping. Just add them once the crumbs form and pulse a few times in the food processor to chop them and mix them in.

Step Seven: Place the crumble on top of the rhubarb mixture. You want to just lightly scatter the crumbs over the strawberry rhubarb filling.

Step Eight: Bake for 45-50 minutes or until the top is golden brown.

Can I Add Nuts to Keto Rhubarb Crumble Bars? 

Yes, absolutely! Adding your favorite nut will give the keto crumble bars a nice subtle crunch. Pecans and walnuts would be my nut of choice, but you could really use whatever you like. Chop them and sprinkle them on top of the crumble topping. 

How Will I Know the Bars Are Done? 

They will develop a golden-brown color on the crumb topping. Plus, they will be set up, and there won’t be lots of jiggle when you shake the pan. There will be a little bit, but it shouldn’t be too runny. It will thicken even more as it cools. 

How Long Do Crumble Bars Last?

They will actually last 4-5 days if you keep them refrigerated. They should never sit out longer than 2 hours, or they will start to spoil.

You can freezer them in a sealed container, and they will last 1-2 months.

  • 1 cup coconut oil cold
  • 2 cup almond flour
  • cup coconut flour
  • cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
  • 2 eggs
  • 2 teaspoon vanilla

Jam Filling:

  • 5 stalks rhubarb sliced
  • 16 oz strawberries sliced, fresh or frozen
  • cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
  • 1 teaspoon xanthan gum


  • 2 cup almond flour
  • cup Joy Filled Eats Sweetener (or see alternatives in recipe notes)
  • ½ cup coconut oil


  • Preheat the oven to 350. Line a 9×13 pan with parchment paper.
  • Process the ingredients for the crust in a food processor until they come together in a ball. Spread in the bottom of the prepared pan.
  • Combine the rhubarb and sweetener in a medium skillet. Cook over medium heat for 5 minutes until the rhubarb is beginning to soften. Add the strawberries and cook an additional 2-3 minutes. Add the xanthan gum and mix well. Cool for at least 10 minutes.
  • Spread the rhubarb mixture on top of the crust.
  • Add the crumble ingredients to the food processor. Pulse until large crumbs form. Sprinkle on top of the filling.
  • Bake for 40 minutes until golden brown.


Nutrition: This recipe makes 18 bars. The nutrition facts are for 1 bar. There are 5.5 NET carbs per serving.

To Store: The bars should be kept airtight and refrigerated except for when you are serving. They will last 4-5 days. 

To Freeze: Place in a freezer-safe container, and they will last in the freezer for 1-2 months. 

Notes on Sweeteners: 

I use my own blend of xylitol, erythritol, and stevia in my recipes. This is twice as sweet as sugar. It is comparable to Trim Healthy Mama Gentle Sweet and Truvia.

To sub in Swerve or Lakanto Monk Fruit use 1.5 times the amount of sweetener called for. 
To sub in Pyure or Trim Healthy Mama Super Sweet use half the amount of sweetener called for.
Substitutions will work in most recipes. They may not work in candies, such as caramel.
